Basa Recipe?

I've recently been buying basa from the supermarket, mostly because my choices are limited there and basa is the cheapest. Basa is a type of catfish with white, flaky flesh and a very mild taste. I've never cooked or had it before, but this recipe I've been modifying from allrecipes.com has been pretty decent and very simple to make.

Ingredients:

  • 4 basa fillets
  • 1/8-1/4 cup of honey
  • 3 tablespoons of Dijon mustard
  • 1.5 tablespoons of mayonnaise
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice

  1. Preheat the oven to 450 ˚F
  2. Mix mustard, mayonnaise, olive oil, honey, and lemon juice together in a separate bowl
  3. Coat the basa fillets in the sauce and lightly season them with black pepper, garlic powder*, thyme and parsley.
  4. Wrap the fillets in aluminum foil and stick them in the oven until they fragment easily when poked with a utensil (15-20 min)
I like this method of cooking that wraps the fish in the aluminum foil because it keeps the fish nice and moist even if you leave it in the oven longer. However, I wish the fish had some crunchiness because just having it be that one soft texture throughout is kind of  . . . . boring? I'd like to try something like adding panko/breadcrumbs or searing it on a skillet first before putting it in the oven next time (this is more work tho T o T).

*Because I'm a poor college student, I prefer to substitute fresh garlic with a large container of garlic powder because it preserves the essential garlic taste while saving you the money of buying fresh garlic and it has a long shelf life. I'm sure fresh garlic would taste better though :(.
